WHere is a simplified take on a beverage featured on a new cocktail list. It's a batch premix which is loaded with the flavours of a Christmas time, rendering it ideal for a festive gathering. Reserve the remaining syrup you can use for morning drinks, sweets, or for more rounds of this cocktail.

Serves 10 guests
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Place every ingredients inside a saucepan, bring to a simmer, stirring so the sugar melts. Next, take off the burner allowing it to cool down entirely. Transfer to a sterilised bottle, close it and store chilled, it will last for up to one month.
To make Cocktail Base: Mix the specified liquids into a big jug, allow it to infuse for 60 minutes, then strain preferably using cheesecloth, so it's completely strained.
For serving: Add 85ml of the batch mix into a stirring glass filled with ice, and agitate gently for one minute to cool it down. Strain into a cold coupe glass or a similar vessel, garnish with a few cranberries and complete it by giving it a quick spritz of the essential oil above the glass.
